The Muffin Man never made muffins this way. Then again, we like to add something a little unexpected to our muffins, like frosted blueberry shredded wheat cereal.

4 very ripe bananas, mashed | ||
¼ c. low-fat buttermilk | ||

2 c. Hy-Vee frosted bite-size blueberry shredded wheat cereal, finely crushed | ||
1 c. Hy-Vee all-purpose flour | ||
1 tsp. Hy-Vee baking soda | ||
½ tsp. Hy-Vee salt |

Directions
Whisk together sugar and oil in a large bowl. Whisk in bananas, buttermilk and eggs. In a medium bowl, combine crushed cereal, flour, baking soda and salt. Fold into wet ingredients, stirring until just combined. Divide batter between prepared muffin cups.
Bake for 20 minutes or until toothpick inserted in center comes out clean. Cool in pan for 15 minutes, then turn out onto wire rack to cool completely.
