1 whole bulb fresh garlic, cut horizontally in half | ||
1 tbsp. Hy-Vee salted butter, melted | ||
1 tsp. chopped fresh thyme | ||
1 tsp. chopped Italian parsley | ||
½ tsp. chopped fresh rosemary |

Directions
Place halved potatoes in a large bowl. Add remaining 2 tbsp. olive oil, salt and pepper; toss to coat.
Place potatoes and garlic halves, cut sides down, in prepared baking pan. Roast for 25 to 30 minutes or until fork-tender.
Carefully squeeze roasted garlic halve to pop out cloves in a small cup; mash with a fork.
Stir together butter, thyme, parsley and rosemary in a serving bowl. Add roasted potatoes; toss to coat. Serve potatoes with roasted garlic.
