Description
Dried herbs add a flavorful crust to this baked beef tenderloin. Use an thermometer to cook meat to your desired doneness.

1 (3 lb) well-trimmed center-cut beef tenderloin roast |
Directions
- Combine olive oil, garlic, basil, black pepper and rosemary. Press into beef tenderloin, covering all sides. Place roast on a rack in a shallow roasting pan.
- Bake in preheated oven at 425 degrees for 35 to 45 minutes for medium-rare or 45 to 55 minutes for medium doneness. Remove roast when meat reaches 135 degrees for medium rare, 150 degrees for medium. Tent tenderloin with foil and let stand 15 minutes. Temperature of meat will continue to rise about 10 degrees to reach 145 degrees for medium rare, 160 degrees for medium.
