Herbed Mushrooms and Barley

½ c. sliced fresh mushrooms | ||
1 tbsp. Hy-Vee Select olive oil | ||
2 tbsp. chopped green onion | ||
¼ tsp. dry tarragon | ||
3 c. Hy-Vee chicken broth | ||
1 c. pearl barley |
Directions
- Saute mushrooms in olive oil over medium-high heat 2 to 3 minutes.
- Stir in onion, garlic and tarragon. Cook another 2 to 3 minutes.
- Pour in chicken broth and barley. Cover and reduce heat to medium-low.
- Simmer 45 minutes or until barley is tender and liquid is absorbed.
