Directions
- Preheat oven to 500 degrees. Rub roast with oil, salt, pepper and garlic. Bake for 20 minutes.
- Reduce oven temperature to 250 degrees and bake until internal temperature reaches 135 degrees. Remove from oven; allow to rest 30 minutes.
