Directions
Heat a large nonstick or cast-iron skillet over medium-low heat for about 2 minutes. Spread half of butter on one side of 2 slices of bread. Place, buttered sides down, on work surface. Spread half of preserves mixture on top of bread slices. Top evenly with Cheddar cheese, pepper Jack cheese, avocado slices and Gouda cheese. Spread remaining preserves mixture on the 2 remaining slices of bread. Place, preserves side down, on top of cheese. Spread remainder of butter on bread on top of sandwiches.
Place sandwiches in preheated skillet. Cook for 3 to 4 minutes or until cheese is melted and bread is lightly browned, turning halfway through. Cut in half before serving.
