Directions
- Bake potatoes in a 425-degree oven for 45 minutes or until they are tender when pricked with a fork.
- While potatoes are baking, cook carrots and green beans in a little simmering water until tender. Prepare the Sloppy Joes recipe.
- Drain carrots and beans and mix into the Sloppy Joes mixture.
- After removing potatoes from oven, reduce oven temperature to 350 degrees. Using a pot holder to hold each potato, sliced the baked potatoes in half the long way.
- Scoop out the white insides, leaving a 1/4-inch shell. Place shells on a baking sheet. Place white insides in a mixing bowl.
- Using an electric mixer or potato masher, mash potatoes with salt and pepper. Add hot water as needed to make potatoes the desired consistency.
- Place 1/3 cup Sloppy Joes filling into each of the 12 potato shells.
- Spread 1/2 cup mashed potatoes over top of each shell to cover the filling.
- Sprinkle with paprika. Bake at 350 degrees for 20 minutes, until heated through.
