Italian Market Scrambled Eggs

1 c. diced fresh mushrooms | ||
2 tbsp. finely chopped red onion | ||
4 Hy-Vee large eggs, beaten | ||
Hy-Vee salt and Hy-Vee pepper, optional | ||
1 Roma tomato, seeded and diced | ||
2 c. hot, cooked brown rice | ||
2 tbsp. shredded Parmesan cheese | ||
2 tbsp. shredded fresh basil |
Directions
- Heat a skillet over medium-high heat. Spray with non-stick cooking spray. Sauté mushrooms and onions.
- Reduce heat to medium-low. Add eggs, salt and pepper to taste. Cook and stir until almost set. Stir in tomatoes. Continue stirring until eggs are set.
- Serve eggs on a bed of rice. Sprinkle with Parmesan cheese and fresh basil.
