Italian Salmon Pasta Salad

2 oz. uncooked Hy-Vee bow tie pasta | ||
1 lbs. salmon fillet | ||
1 c. rinsed, drained canned garbanzo beans | ||
¾ c. sliced, quartered cucumber | ||
¼ c. chopped red onion | ||
¼ c. Hy-Vee sliced black olives | ||
¼ c. grated carrot | ||
⅓ c. Hy-Vee Italian dressing* | ||
1 (16 oz) pkg romaine lettuce, divided | ||
¼ c. Hy-Vee shredded Parmesan cheese |
Directions
- Cook pasta according to package directions. Drain; rinse with cold water.
- Place salmon on microwave-safe plate. Cover with waxed paper. Microwave salmon on HIGH for 3 to 5 minutes, or until internal temperature reaches 140 degrees or fish flakes easily with a fork.
- Combine cooked pasta, garbanzo beans, cucumber, red onion, black olives and carrots in a large bowl. Pour dressing* over salad. Toss to coat.
- Place 1 cup of romaine lettuce on each plate.
- Top lettuce with one-fourth of the pasta salad. Sprinkle pasta salad with Parmesan cheese. Place flaked salmon atop each plate.
- *TIP: Purchased balsamic vinaigrette dressing may be used in place of Italian dressing.
