1 medium onion, diced | ||
3 carrots, peeled, halved lengthwise and sliced | ||
3 stalks celery, sliced | ||
1 tsp. Hy-Vee Italian seasoning | ||
2 c. Hy-Vee 33% reduced-sodium chicken broth | ||
2 c. water | ||
3 c. frozen Hy-Vee Select cheese tortellini | ||
3 c. baby spinach | ||
Hy-Vee salt and Hy-Vee black pepper, to taste | ||
Hy-Vee grated Parmesan cheese, optional |
Directions
- Heat oil in large pot over medium heat. Add onion, carrot, celery and Italian seasoning; sauté, stirring occasionally, 5 to 7 minutes or until vegetables soften.
- Stir in broth and water. Cover and bring to a boil over medium-high heat.
- Stir in tortellini, reduce heat and simmer 3 minutes. Add spinach and cook, stirring until wilted, about 2 minutes.
- Season with salt and pepper. If desired, sprinkle with cheese before serving.
