2 Roma tomatoes, seeded and chopped
2 tbsp. dried currants or chopped raisins
1 tbsp. thinly sliced green onion
1 tbsp. lemon juice
1/8 to 1/4 tsp crushed red pepper
⅛ tsp. salt

Directions

  1. In a bowl combine jicama, tomato, currants or raisins, green onion, lemon juice and seasonings.
  2. Enjoy with quinoa chips or serve on top of pulled pork or grilled chicken sandwiches.
