1 (16 oz) pkg Hy-Vee fudge brownie mix | ||
1 Hy-Vee large egg | ||
⅓ c. water | ||
3 tbsp. Hy-Vee vegetable oil | ||
5 Hy-Vee fudge mint cookies, chopped (about 1 c.) | ||
8 tbsp. Hy-Vee butter, softened, divided | ||
2 c. Hy-Vee powdered sugar | ||
2 tbsp. Hy-Vee skim milk | ||
½ tsp. peppermint extract | ||
Green food coloring | ||
1 c. Hy-Vee semi-sweet chocolate chips | ||
½ tsp. Hy-Vee vanilla extract |
Directions
- Preheat oven to 350 degrees. Grease bottom only of 8- or 9-inch square pan.
- Prepare brownies according to package directions, using egg, water and oil. Stir in chopped cookies. Bake according to package directions.
- Cool for 1 hour. In medium bowl, mix 4 tablespoons butter, powdered sugar, milk, peppermint extract and green food coloring until fluffy. Spread over brownies. Refrigerate 1 hour.
- For chocolate glaze, combine remaining 4 tablespoons butter and chocolate chips and microwave in 30-second intervals, stirring until smooth. Stir in vanilla. Pour over green frosting and spread. Refrigerate 1 hour.
