    1 (16 oz) pkg Hy-Vee fudge brownie mix
    1 Hy-Vee large egg
    ⅓ c. water
    3 tbsp. Hy-Vee vegetable oil
    5 Hy-Vee fudge mint cookies, chopped (about 1 c.)
    8 tbsp. Hy-Vee butter, softened, divided
    2 c. Hy-Vee powdered sugar
    2 tbsp. Hy-Vee skim milk
    ½ tsp. peppermint extract
    Green food coloring
    1 c. Hy-Vee semi-sweet chocolate chips
    ½ tsp. Hy-Vee vanilla extract

    Directions

    1. Preheat oven to 350 degrees. Grease bottom only of 8- or 9-inch square pan.
    2. Prepare brownies according to package directions, using egg, water and oil. Stir in chopped cookies. Bake according to package directions.
    3. Cool for 1 hour. In medium bowl, mix 4 tablespoons butter, powdered sugar, milk, peppermint extract and green food coloring until fluffy. Spread over brownies. Refrigerate 1 hour.
    4. For chocolate glaze, combine remaining 4 tablespoons butter and chocolate chips and microwave in 30-second intervals, stirring until smooth. Stir in vanilla. Pour over green frosting and spread. Refrigerate 1 hour.
