Directions
In a medium bowl, combine potatoes, egg, and flour, mix well. Add desired mix-ins, and stir well to combine. Form 1/2-cup portions into flat patties about 1/2-inch-thick.
Heat oil in a large skillet over medium heat. Fry each pancake 2 to 3 minutes per side, until lightly browned and warmed through. Serve hot with desired garnishes.
