4 catfish fillets | ||
⅓ c. soft margarine | ||
⅓ c. lemon juice | ||
1 tsp. pepper | ||
¼ c. diced celery | ||
2 tbsp. snipped parsley | ||
2 tsp. salt | ||
½ c. diced carrots | ||
¼ c. chopped green onion | ||
2 medium lemons, thinly sliced |
Directions
- Preheat oven to 350 degrees.
- Place each fillet in separate foil pieces that are 4 inches longer than catfish.
- Melt the margarine in a medium skillet over medium heat.
- Combine margarine, lemon juice, pepper, celery, parsley, salt, carrots and onions and saute for 5 minutes.
- Divide the vegetables between fillets and top with lemon slices.
- Fold foil around fish.
- Bake for 30 minutes.
