Light and Hearty Broccoli Cheese Soup

2 c. chopped fresh broccoli | ||
¼ c. diced green onion | ||
1 c. water | ||
1 (14.5 oz) can Hy-Vee low-sodium chicken broth | ||
1 (4 oz) bag Idahoan loaded baked flavored mashed potatoes | ||
1 ½ c. Hy-Vee skim milk | ||
1 c. Hy-Vee 2% milk shredded cheddar cheese | ||
Hy-Vee black pepper to taste |
Directions
- In a large saucepan, combine broccoli, onion, water and chicken broth. Bring to a boil over high heat. Reduce heat and simmer 5 minutes.
- Stir in mashed potatoes until smooth.
- Slowly stir in milk. Do not boil.
- Add cheese and stir until smooth. Season with black pepper.
