¾ c. Hy-Vee elbow macaroni | ||
1 (15 oz) can no-salt-added tomato sauce | ||
½ tsp. Hy-Vee garlic powder | ||
1 tsp. Italian seasoning | ||
1 tsp. dried parsley flakes | ||
½ tsp. Hy-Vee black pepper | ||
1 c. fat-free cottage cheese | ||
1 c. shredded reduced-fat mozzarella cheese, divided | ||
¼ c. Hy-Vee shredded Parmesan cheese |
Directions
- Prepare macaroni according to package directions. Drain; set aside.
- Combine tomato sauce, garlic powder, Italian seasoning, parsley flakes and black pepper in a large skillet. Bring to a boil.
- Stir together cottage cheese, 1/2 cup mozzarella cheese and Parmesan cheese. Stir into tomato sauce. Simmer 5 minutes or until the cheeses begin to melt, stirring often.
- Stir in macaroni. Evenly sprinkle remaining 1/2 cup mozzarella cheese over top. Cover and simmer until mozzarella cheese melts, about 3 minutes.
