Place simple syrup in a medium saucepan over medium heat. Bring to a simmer. Turn heat off and allow hibiscus tea to steep in simple syrup for 5 minutes. Remove bag from simple syrup and discard. Set aside and cool to room temperature.

Just like a traditional Mai Thai, this drink has a pineapple base but gets an updated twist with hibiscus tea steeped simple syrup and fresh thyme sprigs.

Save the hibiscus simple syrup for later. Just place the simple syrup in a glass container with a tight fitting lid, such as a mason jar, and refrigerate for up to 1 month.Fill a cocktail glass with ice and 2-oz. pineapple juice; set aside.
In a cocktail shaker, add ice, 1-oz. Hibiscus Simple Syrup, rum, honey, lime juice, and thyme sprigs. Shake thoroughly to chill, and strain into pineapple juice. If desired, garnish with a fresh thyme sprig.
