Mandarin Mousse

Description
This fluffy dessert makes a delightful sweet finale to any meal. The mandarin can be substituted with regular orange or even grapefruit.

½ c. Hy-Vee low-fat cottage cheese, drained | ||
¼ c. Hy-Vee low-fat vanilla yogurt | ||
3 tbsp. Hy-Vee orange juice | ||
1 tbsp. Hy-Vee honey | ||
Hy-Vee salt | ||
4 Hy-Vee egg whites (pasteurized liquid egg whites) | ||
¼ c. Hy-Vee sugar | ||
½ c. chopped fresh mandarin oranges, plus additional orange segments for serving | ||
Fresh mint sprigs, for garnish |
Directions
- In a food processor or blender, combine cottage cheese, yogurt, orange juice, honey and salt. Cover and process until smooth; set aside.
- In a large mixing bowl, beat egg whites with an electric mixer until soft peaks form (tips curl). Gradually add sugar and continue beating until stiff peaks form (tips stand straight).
- Fold beaten whites into cottage cheese mixture. Fold in chopped oranges.
- To serve, top with orange sections. If desired, garnish with mint.
