4 (6 oz each) salmon fillets | ||
2 tbsp. Hy-Vee orange juice | ||
2 tbsp. Hy-Vee pancake syrup | ||
2 tbsp. teriyaki sauce | ||
½ tsp. Hy-Vee red pepper flakes | ||
½ large cantaloupe, diced | ||
¾ c. finely diced red bell pepper | ||
¼ c. finely chopped cilantro | ||
2 tbsp. finely chopped green onion | ||
1 jalapeno pepper, finely minced | ||
juice of 1 lime (2 tbsp) | ||
¼ tsp. Hy-Vee salt |
Directions
- Place salmon in a resealable plastic bag.
- In a small bowl, combine orange juice, syrup, teriyaki sauce and red pepper flakes to make a marinade. Pour over fillets and refrigerate 2 to 12 hours.
- Meanwhile, in a medium bowl, toss together cantaloupe, red bell pepper, cilantro, green onion, jalapeno pepper and lime juice. Cover and refrigerate until ready to serve with the salmon.
- Preheat broiler.
- Remove salmon fillets from marinade and discard marinade.
- Place salmon on a greased broiler pan. Sprinkle with salt.
- Broil for 5 to 7 minutes or until fish flakes easily with a fork.
- Serve with cantaloupe salsa on the side.
