Maple-Glazed Vegetables

3 c. sliced sweet potatoes (1/2-inch rounds) | ||
2 ½ c. cauliflower florets | ||
2 c. halved Brussels sprouts | ||
3 tbsp. coconut oil, melted* | ||
3 tbsp. maple syrup | ||
½ tsp. sea salt | ||
½ tsp. freshly ground black pepper | ||
¼ tsp. garlic powder |
Directions
- Preheat oven to 350 degrees.
- Place sweet potatoes, cauliflower florets and Brussels sprouts in baking dish.
- Combine coconut oil, maple syrup, sea salt, black pepper and garlic powder in small bowl.
- Pour over vegetables in baking dish and stir.
- Bake in oven until tender, about 40 minutes, stirring after 20 minutes.
- *Tip: Use butter or any other heat-stable oil.
