Mashed Peas with Garlic and Oregano

2 shallots, thinly sliced | ||
⅓ c. water | ||
1 (16 oz) package frozen Hy-Vee sweet peas | ||
1 tbsp. chopped fresh oregano | ||
2 tbsp. Hy-Vee lemon juice | ||
2 garlic cloves, minced | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Heat olive oil in a large skillet over medium heat. Add shallots and cook until tender, stirring occasionally. Add water and peas; bring to boil. Cover and cook 5 minutes or until peas are tender.
- Place pea mixture in food processor. Add oregano, lemon juice and garlic; process until smooth. Season with salt and pepper, if desired.
