Mashed Potato Halibut Croquettes

½ c. chopped onion | ||
2 c. mashed potatoes | ||
1 (12 oz) pkg Fish Market halibut steaks, thawed, cooked, crumbled | ||
Hy-Vee salt and Hy-Vee pepper, to taste | ||
1 c. panko bread crumbs |
Directions
- Cook bacon in a skillet over medium heat; remove from pan. Cool; crumble. Sauté onion in same skillet.
- Stir together bacon, onion, potatoes, halibut, salt and pepper. Roll in bread crumbs.
- Broil on LOW for 8 minutes; turn. Broil an additional 2 to 5 minutes or until golden.
