Directions
Wash and dry sweet potatoes; pierce several times with a fork. Place in prepared pan. Bake for 50 to 60 minutes or until fork-tender. Cool for 10 minutes.
Remove and discard skins from sweet potatoes; place sweet potato pulp in a large bowl. Mash with a potato masher or an electric mixer on low. Stir in 1/4 cup butter, brown sugar and sea salt.
Serve with additional butter, if desired. Season to taste with black pepper.
