1 (13.25 oz) pkg Hy-Vee ALA omega-3 angel hair pasta | ||
2 tbsp. Hy-Vee Select olive oil | ||
1 lbs. skinless boneless chicken breasts, sliced diagonally | ||
1 (8 1/2-oz) jar sun-dried tomatoes, drained, julienned | ||
2 tbsp. minced garlic | ||
¼ c. fresh basil or 1 tablespoon dried | ||
1 (8.5 oz) can artichoke hearts in water, drained and quartered | ||
½ c. Kalamata olives, pitted | ||
6 oz. crumbled feta cheese | ||
¼ c. heavy cream | ||
2 tsp. dried oregano | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Cook pasta according to package directions. Drain.
- Meanwhile, heat olive oil in a skillet over medium heat. Brown chicken strips for 3 minutes on each side or until no longer pink.
- Add sun-dried tomatoes and garlic to skillet. Sauté for 2 minutes.
- Add the basil, artichoke hearts, olives and feta cheese to the skillet. Sauté 1 minute then stir in the cream.
- Transfer pasta to a large pasta bowl. Add the chicken sauté to the pasta and toss. Season with oregano, salt and pepper before serving.
