2 c. chopped fresh tomatoes
1 c. unpeeled chopped cucumbers
⅓ c. (1-1/2 oz) shredded reduced-fat mozzarella cheese
1 tbsp. chopped fresh parsley or 1 tsp dried parsley flakes
¼ c. fat-free Italian dressing

Directions

  1. In a large bow, combine tomatoes, cucumbers, mozzarella cheese and parsley.
  2. Add Italian dressing. Mix gently to combine.
  3. Cover and refrigerate for at least 20 mintues. Gently stir again just before serving.
