1 (5.25 oz) box Near East taboule wheat salad mix
1 c. boiling water
1 medium cucumber, peeled, seeded and finely chopped
2 Roma tomatoes, seeded and finely chopped
½ c. finely chopped red onion
3 tbsp. fresh lemon juice
1 tbsp. Hy-Vee Select extra-virgin olive oil
Chopped fresh parsley, optional

Directions

  1. Combine wheat salad, the included spice packet and water in a large bowl. Cover and refrigerate for 30 minutes.
  2. Stir in cucumber, tomatoes, red onion, lemon juice and olive oil. Serve immediately or refrigerate until serving time. Toss with chopped fresh parsley, if desired.
