1 c. boiling water | ||
1 medium cucumber, peeled, seeded and finely chopped | ||
2 Roma tomatoes, seeded and finely chopped | ||
½ c. finely chopped red onion | ||
3 tbsp. fresh lemon juice | ||
1 tbsp. Hy-Vee Select extra-virgin olive oil | ||
Chopped fresh parsley, optional |
Directions
- Combine wheat salad, the included spice packet and water in a large bowl. Cover and refrigerate for 30 minutes.
- Stir in cucumber, tomatoes, red onion, lemon juice and olive oil. Serve immediately or refrigerate until serving time. Toss with chopped fresh parsley, if desired.
