6 medium red bell peppers | ||
3 c. dry Hy-Vee instant brown rice | ||
1 lbs. 95%-lean ground beef | ||
1 (1.25 oz) package Hy-Vee taco seasoning | ||
1 yellow onion, diced | ||
½ c. Hy-Vee Mexican 2% shredded cheese |
Directions
- Slice off tops of bell peppers and remove seeds and membranes. Bring a large pot of water to a boil and boil red peppers for 5 minutes.
- Prepare rice according to package instructions. Meanwhile brown ground beef in a large skillet. After 5 minutes, stir in taco seasoning and onions. Continue cooking for 5 minutes. Add cooked rice and mix well.
- Stuff bell peppers with meat mixture and prop upright in an 8-by-8-inch baking dish. Top with cheese. Broil for 1 to 2 minutes or until cheese is melted.
