6 oz. Hy-Vee cheddar or white cheddar cheese, sliced
¼ c. Hy-Vee butter, melted
8 slice(s) Hy-Vee Bakery whole grain bread
2 avocados, peeled, seeded and sliced
1 c. shredded carrot
1 red bell pepper, seeded and thinly sliced
1 c. chopped red onion

Directions

  1. Cut cheese into 12 (1/2-ounce) slices; set aside.
  2. Brush one side of each slice of bread with butter; place, buttered side down, on waxed paper. Top half of the bread slices with 3 slices cheese; layer one-fourth of the avocado, carrot, red pepper and red onion on top of each. Top sandwiches with remaining bread slices, buttered sides up.
  3. In a large skillet cook sandwiches over medium-high heat for 6 to 8 minutes or until bread is toasted, turning once halfway through cooking. (Or place sandwiches in a sandwich press and cook about 6 minutes or until done.)
