Mini-Pumpkin Kiddie Snack

1 baby pumpkin | ||
½ tsp. Hy-Vee unsalted butter or margarine | ||
½ tsp. brown sugar | ||
½ tsp. cinnamon, divided | ||
1/4 to 1/2 c. Hy-Vee unsweetened applesauce, depending on size of the pumpkin |
Directions
- Preheat oven to 375 degrees.
- Cut top off pumpkin with a paring knife. Scoop out all the pumpkin seeds.
- Place butter in bottom of pumpkin followed by brown sugar and 1/4 teaspoon cinnamon. Add applesauce; add remaining 1/4 teaspoon cinnamon. Place top back on pumpkin and bake for 45 to 60 minutes, or until pumpkin flesh is tender.
- Remove lid and allow to cool for at least 30 minutes. Remove pumpkin “meat” from shell. Mix pumpkin “meat” with applesauce and enjoy!
