Mixed Berry Persimmon Bars

1 c. persimmon pulp* | ||
1 tsp. Hy-Vee baking soda | ||
1 Hy-Vee large egg | ||
1 c. Hy-Vee white sugar | ||
½ c. Hy-Vee vegetable oil | ||
1 c. Hy-Vee dried mixed berries | ||
1 ½ c. Hy-Vee flour | ||
1 tsp. apple pie spice | ||
½ tsp. Hy-Vee allspice | ||
1 c. Hy-Vee powdered sugar | ||
2 tbsp. Hy-Vee skim milk |
Directions
- Preheat oven to 350 degrees. In a small bowl, stir together persimmon pulp and baking soda. Set aside.
- In a separate bowl, beat together egg, white sugar, oil and berries.
- In a large bowl, stir together flour, apple pie spice and allspice. Stir in persimmon mixture. Stir in egg mixture. Spread batter into a greased 10-by-15-inch jelly roll pan.
- Bake for 20 minutes. While bars are baking, stir together powdered sugar and skim milk. Remove bars from oven and drizzle with powdered sugar mixture.
- *To make pulp, peel and de-stem persimmons. Process them in a food processor or blender.
