Modified Couscous with Golden Raisins and Almonds

1 c. pineapple-orange-banana juice | ||
1 c. water | ||
½ c. golden raisins | ||
1 tbsp. Hy-Vee Select garlic-flavored olive oil | ||
1 (10 oz) package plain couscous |
Directions
- Preheat oven to 350 degrees. Spread almonds on a baking sheet. Toast for 8 to 10 minutes or until light golden brown.
- Combine juice, water, raisins and olive oil in a medium saucepan. Bring to a boil. Remove from heat.
- Stir in couscous. Cover and let stand for 5 minutes. Fluff gently with a fork and stir in toasted almonds.
