Monster Chicken Salad Sandwiches

1 (18 oz) loaf Take & Bake natural whole grain bread, baked according to package directions and cooled | ||
½ c. light chive and onion cream cheese | ||
⅓ c. light mayonnaise | ||
¼ tsp. curry powder | ||
2 tbsp. Hy-Vee skim milk | ||
1 Hy-Vee heavy weight savory rotisserie chicken, shredded (about 4 c.) | ||
½ c. finely chopped celery | ||
Hy-Vee salt and Hy-Vee pepper, optional |
Directions
- Cut the bread in half length-wise. Remove center of each half to make room for the filling, leaving 3/4-inch-thick shell.
- Beat together cream cheese, mayonnaise, curry powder and milk. Fold in shredded chicken and celery. Season with salt and pepper, if desired.
- Spread mixture on bottom half of bread. Press top half of bread gently on top of filling.
- Wrap sandwich tightly in plastic wrap and refrigerate until serving time. Cut into slices to serve.
