1 ½ c. Hy-Vee all-purpose flour | ||
1 tbsp. Hy-Vee baking powder | ||
½ tsp. Hy-Vee baking soda | ||
½ tsp. Hy-Vee salt | ||
2 tsp. Hy-Vee ground cinnamon | ||
1 c. shredded carrots | ||
½ c. Hy-Vee flake coconut | ||
1 medium apple, peeled, cored and finely chopped or shredded | ||
½ c. Hy-Vee granulated sugar | ||
⅓ c. Hy-Vee vegetable oil | ||
⅓ c. Hy-Vee unsweetened applesauce | ||
1 Hy-Vee large egg |
Directions
- Preheat oven to 375 degrees. Grease muffin pans with non-stick spray. Combine cereal, flour, baking powder, baking soda, salt and cinnamon; set aside.
- Combine carrots, coconut, apple, sugar, oil, applesauce and egg. Beat well with an electric mixer. Add dry ingredients and stir until thoroughly combined.
- Spoon batter into muffin pans, filling 3/4 full.
- Bake for 20 to 25 minutes or until the tops are golden and spring back when lightly touched. Remove from pans immediately.
