    1 ½ c. Hy-Vee Select extra fruit granola cereal
    1 ½ c. Hy-Vee all-purpose flour
    1 tbsp. Hy-Vee baking powder
    ½ tsp. Hy-Vee baking soda
    ½ tsp. Hy-Vee salt
    2 tsp. Hy-Vee ground cinnamon
    1 c. shredded carrots
    ½ c. Hy-Vee flake coconut
    1 medium apple, peeled, cored and finely chopped or shredded
    ½ c. Hy-Vee granulated sugar
    ⅓ c. Hy-Vee vegetable oil
    ⅓ c. Hy-Vee unsweetened applesauce
    1 Hy-Vee large egg

    Directions

    1. Preheat oven to 375 degrees. Grease muffin pans with non-stick spray. Combine cereal, flour, baking powder, baking soda, salt and cinnamon; set aside.
    2. Combine carrots, coconut, apple, sugar, oil, applesauce and egg. Beat well with an electric mixer. Add dry ingredients and stir until thoroughly combined.
    3. Spoon batter into muffin pans, filling 3/4 full.
    4. Bake for 20 to 25 minutes or until the tops are golden and spring back when lightly touched. Remove from pans immediately.
