1 lbs. salmon fillet, cut into 4 fillets | ||
10 kumquats, chopped | ||
1 tbsp. Hy-Vee brown sugar | ||
1 tbsp. Hy-Vee Select white wine vinegar |
Directions
- Combine mustard, marmalade and salt in a small bowl. Set aside.
- Place salmon fillets skin-side-down on a greased baking pan. Spread each fillet with mustard mixture.
- Bake in a 425-degree oven for 12 to 15 minutes or until fish flakes easily with a fork.
- Meanwhile, in a small bowl, combine kumquats, brown sugar and vinegar.
- Top each salmon fillet with kumquat mixture before serving.
