3 (8 oz each) pkg cream cheese, softened | ||

5 large eggs, separated | ||
¼ c. sifted flour | ||
2 ½ tbsp. lemon juice | ||
1 c. sour cream | ||
¼ tsp. nutmeg or mace | ||
½ tsp. almond flavoring | ||
1 tsp. vanilla | ||

Directions
- Mix together graham cracker crumbs, melted butter, 1/4 cup sugar and 1/4 teaspoon salt. Press onto bottom and sides of greased springform pan.
- Mix cream cheese, 1-1/4 cups sugar, salt and egg yolks. Add flour and mix thoroughly. Add sour cream, nutmeg, almond flavoring and vanilla.
- Beat egg whites with the remaining 1/4 cup sugar until light and fluffy. Fold into mixture. Pour filling into graham cracker crust. Glaze with fruit, if desired.
- Bake at 325 degrees for 1 hour. Turn off oven and leave cheesecake in oven for 1 hour. Remove from oven. Cool completely and refrigerate.
