    1 (14-oz.) pkg. prepared coleslaw
    ½ c. red onion, chopped
    1 tsp. Hy-Vee salt
    1 tsp. Hy-Vee ground black pepper
    1 c. Hy-Vee apple cider-flavored vinegar
    1 c. Hy-Vee granulated sugar
    1 tbsp. Hy-Vee yellow mustard
    1 tbsp. Hy-Vee canola oil
    Nitro PEPSI Glazed Ribs
    3 (2-1/2-lbs. each) racks pork back loin ribs
    2 tbsp. Gustare Vita olive oil
    ¼ c. Moe's pork rub
    1 (16-oz.) bottle Moe's I-80 BBQ sauce
    1 (12-oz.) can PEPSI Nitro soda

    Directions

    1. Make Moe's Sweet Vinegar Slaw: Add coleslaw, red onion, salt, and pepper to a large bowl; set aside. Place vinegar, sugar, oil, and mustard in a small saucepan over medium heat. Whisk until sugar dissolves. Remove from heat; cool completely. Refrigerate coleslaw and vinegar mixtures separately. Toss just before serving.

    2. Make Nitro PEPSI Glazed Ribs: Remove membrane from ribs; rub with oil and season with pork rub. Let ribs stand 1 hour at room temperature before smoking.

    3. Place saucepan over low heat and combine BBQ sauce and PEPSI. Cook 3 to 5 minutes or until slightly thickened. Remove from heat; cool slightly and set aside.

    4. Preheat a smoker according to manufacturer's directions for 275 degrees. Tear 3 sheets of aluminum foil to make a boat for ribs to lay in. Place ribs, bone sides down, in smoker. Smoke ribs 3-1/2 hours minutes or until ribs reach 203 degrees.

    5. Brush ribs with glaze and return to smoker. Smoke 2 to 5 more minutes or until glaze caramelizes. Remove slabs from foil. Serve with coleslaw.
