2 c. crushed graham crackers | ||
1 c. flaked coconut | ||
½ c. butter, softened | ||
3 tbsp. milk | ||
1 (3.75 oz) pkg vanilla instant pudding mix | ||
2 c. sifted powdered sugar | ||
1 (6 oz) pkg chocolate chips | ||
2 tbsp. butter |
Directions
- Combine 1/2 cup butter, white sugar, cocoa and vanilla in top part of double boiler. Cook over simmering water until butter melts. Stir in egg. Continue cooking and stirring until thick, about 3 minutes. Stir in graham cracker crumbs and coconut. Press into buttered 9-inch-square pan.
- Beat softened butter. Add milk, pudding mix and powdered sugar; beat until fluffy. Spread evenly over crust. Refrigerate until firm.
- Melt chocolate chips and 2 tablespoons butter in the top of a double boiler over simmering water. Cool. Spread over pudding layer.
- Refrigerate until firm. Cut into 2-by-3/4-inch bars.
