Directions
Place cheesecake mix in a large bowl. Beat in lemon zest and cold milk with an electric mixer for 3 minutes or until thickened. Pour cheesecake batter over graham cracker crust. Cover and refrigerate 1 hour or until firm.
Arrange sliced Colorado peaches in a circular formation over cheesecake layer.
Pour peach-flavored Jell-O packet into a large bowl. Add boiling water to Jell-O mix and stir 2 minutes or until completely dissolved. Stir in cold water. Cool slightly, pour over fresh peach layer. Cover and refrigerate until Jell-O has set, about 4 hours.
