No-Bake Snowballs

Description
The appearance of the sugar-dusted Snowballs doesn't reveal much, but a surprising jumble of joyous flavors hides inside each.

1 c. Hy-Vee unsalted butter, at room temperature | ||
3 ¾ c. Hy-Vee powdered sugar | ||
1 tsp. Hy-Vee vanilla extract | ||
¾ c. Hy-Vee flake coconut | ||
2 ¼ c. Hy-Vee quick oats | ||
½ c. Hy-Vee mini semi-sweet chocolate chips | ||
Additional powdered sugar, for dusting |
Directions
- In a large bowl, beat butter until smooth, about 1 minute. Gradually add powdered sugar and mix until smooth. Add vanilla, mixing well. Add coconut, quick oats and chocolate chips one at a time, mixing well before adding the next.
- Scoop into balls using 1 tablespoon of dough for each; place on waxed-paper-lined cookie sheet. Dust entire pan of cookies with powdered sugar. Refrigerate until serving. Store in airtight container in refrigerator for up to 3 to 4 days.
