Nutty Coconut Chocolate Drop Cookie

2 Hy-Vee large eggs | ||
2 ¼ c. Hy-Vee all-purpose flour | ||
1 ½ c. Hy-Vee flake coconut | ||
1 c. Hy-Vee quick oats | ||
1 c. Hy-Vee pecan pieces | ||
1 ½ tsp. Hy-Vee baking soda | ||
1 tsp. Hy-Vee salt | ||
3 c. (16 oz) Hy-Vee semi-sweet chocolate chips | ||
½ c. smashed peanut M&M's | ||
1 c. mini M&M's |
Directions
- Preheat oven to 375 degrees.
- In a large bowl, cream butter, sugars, peanut butter, vanilla and eggs until smooth. Add flour, coconut, quick oats, pecan pieces, baking soda and salt, mixing until just incorporated. Finally mix in chocolate chips and both types of M&M's.
- Using a medium cookie scoop (1-3/4-inch diameter), drop onto a parchment-lined cookie sheets. Bake for 11 to 13 minutes or until edges are just golden.
