Oat Waffles with Warm Cinnamon Apple Fruit Topping

2 c. Hy-Vee dried mixed fruit | ||
1 c. Hy-Vee dried cherries | ||
Waffles | ||
½ c. whole grain oat flour | ||
2 tsp. Hy-Vee baking powder | ||
¼ tsp. Hy-Vee salt | ||
1 c. Hy-Vee skim milk | ||
2 tbsp. Hy-Vee unsalted butter, melted | ||
1 omega egg, separated |

Directions
- For fruit topping, mix juice, 3 tablespoons sugar, tapioca, cinnamon sticks and cinnamon in medium saucepan; let stand 5 minutes. Cook on medium heat, stirring constantly, until mixture comes to a full boil. Add dried fruit and simmer, uncovered, on low for 20 to 25 minutes, or until fruit is tender. Remove cinnamon stick; set aside and keep warm.
- For waffles, mix flours, baking powder, 1 teaspoon sugar and salt in medium bowl. Stir in milk, butter and egg yolk until blended.
- Beat egg white in small bowl on high speed until stiff peaks form. Fold flour mixture into egg white. Pour about 1 cup batter onto center of preheated waffle iron. Bake until steaming stops. Repeat with remaining batter. Serve 1/3 cup warm fruit mixture with each oat waffle.
