Oatmeal Banana Cookies

¼ tsp. nutmeg | ||

¾ c. shortening | ||
1 c. sugar | ||
1 egg | ||
1 c. mashed very ripe bananas (about 3) | ||
½ c. chopped nuts | ||
1 ¾ c. uncooked quick oats |
Directions
- Preheat oven to 375 degrees.
- Mix flour, baking soda, salt, nutmeg and cinnamon together. Set aside.
- Cream shortening. Add sugar and beat until creamy and light. Beat in egg.
- Stir in mashed bananas, nuts and oatmeal. Fold in flour mixture.
- Drop by teaspoonfuls onto ungreased cookie sheet.
- Bake for 15 minutes or until edges are golden brown. Remove immediately and cool completely on wire racks.
