    1 ½ c. flour
    ½ tsp. baking soda
    ½ tsp. salt
    ¼ tsp. nutmeg
    ½ tsp. cinnamon
    ¾ c. shortening
    1 c. sugar
    1 egg
    1 c. mashed very ripe bananas (about 3)
    ½ c. chopped nuts
    1 ¾ c. uncooked quick oats

    Directions

    1. Preheat oven to 375 degrees.
    2. Mix flour, baking soda, salt, nutmeg and cinnamon together. Set aside.
    3. Cream shortening. Add sugar and beat until creamy and light. Beat in egg.
    4. Stir in mashed bananas, nuts and oatmeal. Fold in flour mixture.
    5. Drop by teaspoonfuls onto ungreased cookie sheet.
    6. Bake for 15 minutes or until edges are golden brown. Remove immediately and cool completely on wire racks.
