½ c. vegan margarine, softened | ||
1 ½ c. applesauce | ||
½ c. molasses or maple syrup | ||
2 large peeled ripe bananas | ||
1 ¾ c. whole wheat pastry flour | ||
1 tsp. baking soda | ||
1 tsp. baking powder | ||
1 tsp. cinnamon | ||
1 tsp. nutmeg | ||
3 c. rolled oats | ||
½ c. raisins or chopped dates | ||
chopped walnuts or chopped apples, optional |
Directions
- Preheat oven to 400 degrees.
- Cream together margarine, applesauce, molasses (or maple syrup) and bananas in a large bowl.
- Add whole wheat pastry flour, baking soda, baking powder, cinnamon, nutmeg, rolled oats and raisins (or dates). Mix well.
- Stir in chopped walnuts or apples, if desired.
- Drop batter by rounded tablespoons onto a lightly oiled cookie sheet.
- Bake at 400 degrees for 8 minutes.
- Allow cookies to cool before removing from cookie sheet.
