    1 c. uncooked quick oats
    ¾ c. flour
    ½ c. packed brown sugar
    ½ c. shortening
    ¼ c. granulated sugar
    1 large egg
    ½ tsp. salt
    ½ tsp. baking soda
    ½ tsp. vanilla
    ½ c. chocolate or butterscotch chips, optional

    Directions

    1. Preheat oven to 375 degrees.
    2. Beat together oatmeal, flour, brown sugar, shortening, white sugar, egg, salt, baking soda and vanilla. Stir in chips by hand. Drop by teaspoonfuls 1 inch apart onto cookie sheet.
    3. Bake for 12 minutes or until lightly browned.
    4. Remove cookies to wire rack to cool.
