½ c. packed brown sugar | ||
½ c. shortening | ||
¼ c. granulated sugar | ||
1 large egg | ||
½ tsp. salt | ||
½ tsp. baking soda | ||
½ tsp. vanilla | ||
½ c. chocolate or butterscotch chips, optional |
Directions
- Preheat oven to 375 degrees.
- Beat together oatmeal, flour, brown sugar, shortening, white sugar, egg, salt, baking soda and vanilla. Stir in chips by hand. Drop by teaspoonfuls 1 inch apart onto cookie sheet.
- Bake for 12 minutes or until lightly browned.
- Remove cookies to wire rack to cool.
