1 (14.5 oz) can Hy-Vee Italian-style diced tomatoes | ||
1 ½ c. uncooked Hy-Vee old-fashioned oats | ||
1 (15 oz) can Hy-Vee tomato sauce | ||
1 c. Hy-Vee tomato juice | ||
½ c. Hy-Vee medium salsa |
Directions
- Heat oven to 350 degrees.
- Cut off tops of green peppers; remove seeds and membrane.
- In a skillet over medium heat, brown ground beef and onion. Drain. Mix in diced tomatoes, oatmeal and tomato sauce.
- Fill each pepper cup with about 1 cup beef mixture. Place in 9-by-9-inch baking dish.
- Pour tomato juice and salsa evenly over tops of peppers.
- Bake for 45 to 50 minutes or until beef reaches 160 degrees.
