Old-Fashioned Oatmeal Cookies

¾ c. shortening | ||
1 tsp. vanilla | ||

2 ½ c. Gold Medal whole wheat flour | ||
1 tsp. baking soda | ||
1 tsp. ground cinnamon | ||
½ tsp. baking powder | ||
½ tsp. ground cloves | ||
2 c. uncooked quick oats | ||
½ c. chopped nuts | ||
pecan halves, optional | ||
½ c. buttermilk, optional |
Directions
- Preheat oven to 350 degrees.
- Bring raisins and water to a boil in a medium saucepan. Reduce heat and simmer uncovered until raisins are plump, about 15 minutes. Drain and reserve liquid. If needed, add enough water to raisin water to equal 1/2 cup liquid.
- Combine raisins, 1/2 cup raisin water (or 1/2 cup buttermilk), sugar, shortening, vanilla, eggs, flour, baking soda, cinnamon, baking powder, cloves, oatmeal and chopped nuts.
- Drop by spoonfuls onto ungreased cookie sheet. If desired, place pecan half on top of each cookie.
- Bake for 12 to 15 minutes.
- Remove cookies to cooling rack.
