    2 Hy-Vee large eggs, beaten
    2 tbsp. Hy-Vee shredded Mexican cheese blend
    1 tbsp. Hy-Vee chunky mild salsa
    1 Hy-Vee whole wheat tortilla

    Directions

    1. Heat a small non-stick skillet over medium-low heat. Spray with non-stick cooking spray.
    2. Add eggs to pan. Do not stir eggs until they begin to set up, about 30 seconds. Gently stir eggs until they are nearly cooked through. Add cheese and stir until eggs are cooked.
    3. Spread salsa on bottom half of tortilla. Top with eggs and roll burrito-style.
