  2. Spray a rubber spatula with nonstick cooking spray. Mix together granulated sugar and corn syrup in a large microwave-safe bowl. Microwave on HIGH for 4-1/2 minutes.

  3. Remove from microwave and stir in sliced almonds, oatmeal, dried cranberries, and butter. Microwave on HIGH for 4 minutes until mixture is hot, bubbling, and caramelized.

  4. Quickly, mix in baking soda, vanilla extract, and milled flax seed; mixture will foam and spatter. Pour onto a silicone mat and allow to cool completely.

  5. Break brittle into small pieces and store in a container with a tight fitting lid for up to 5 days.
