Orange-Glazed Sweet Potatoes with Toasted Marshmallows

3 ½ lbs. sweet potatoes, peeled, cooked and cubed | ||
¼ c. Hy-Vee orange juice | ||
¾ c. Hy-Vee flour | ||
½ c. packed Hy-Vee brown sugar | ||
¾ tsp. Hy-Vee ground cinnamon | ||
¼ tsp. allspice | ||
½ c. Hy-Vee margarine, softened | ||
1 ½ c. Hy-Vee mini marshmallows |
Directions
- Preheat the oven to 350 degrees.
- Place cubed sweet potatoes in an 11-by-7-inch baking dish. Pour orange juice over potatoes.
- In a medium bowl, combine flour, brown sugar, cinnamon and allspice. Cut in margarine with a pastry blender until mixture resembles fine crumbs. Sprinkle evenly over potatoes.
- Bake uncovered for 30 minutes. Remove from oven and sprinkle marshmallows on top of potatoes.
- Broil 2 to 3 minutes or until marshmallows are toasted.
