Orange-Peanut Chicken Skewers

6 tbsp. Hy-Vee creamy peanut butter | ||
6 tbsp. Hy-Vee soy sauce | ||
1 orange, zested and juiced | ||
¼ tsp. freshly ground black pepper | ||
¼ tsp. cayenne pepper, or to taste | ||
1 (14 oz) can light coconut milk | ||
1 ½ lbs. boneless, skinless chicken breasts | ||
16 wooden skewers |
Directions
- To make orange-peanut sauce, whisk together peanut butter, soy sauce, orange zest, orange juice, black pepper, cayenne pepper and coconut milk in a 13-by-9-inch pan.
- Cut chicken breasts into 1/2-inch wide strips and place in sauce. Cover with plastic wrap and refrigerate for at least 2 hours and up to overnight.
- Soak wooden skewers in water for at least 30 minutes. Preheat grill pan over medium heat. Drain chicken from sauce in a colander placed in a medium saucepan. Bring sauce to a boil and simmer gently for 5 minutes while the chicken cooks. Serve with skewers.
- Thread 1 piece of chicken onto each skewer. Grill skewers 3 to 5 minutes, turning once.
